Taco Salad

Ingredients:

1 cup of spinach

½ cup of diced tomato

1 diced avocado

Veggie ground or ground beef

½ cup of black beans

½


cup of rice


Extras to consider per preference style:

  • Pickled onions or peppers (store bought not homemade)

  • Replacing veggie ground or beef with pulled pork

  • Corn

  • Queso

  • Salsa

  • Crushed tortilla chips

  • Lime wedges

  • Sour cream


Instructions:

  1. Start rice

  2. Wash and dice all of the veggies.

  3. Heat up a pan and cook the drained black beans until warm,remove from heat.

  4. Decide if you're using beef or veggie ground. Veggie ground should be cooked as per instructed on the package.

  5. Cook beef in the following manor:

  • Place olive oil in a pan and wait for it to shimmer or flick water on it and if the water sizzles it's hot enough. Medium to medium-high should suffice. Cook until the meat is completely browned. Look online at other sites for more details.

  1. Place rice and beans in a bowl,mix until combined

  2. Place a bed of spinach on a new set of plates and add rice and bean mixture next, then add preferred toppings.
